Ah hah, a good idea! And I'm definitely looking forward to seeing how your Pyramid Head works out, as well.

Adelheid: Has no 'real' crimes to speak of. He's killed exactly one thing in self-defense (before Landels) and otherwise is an incredibly honorable and nice guy.

His meta-angst comes from his name and his bloodline. He feels guilty that he's prospered from the Bernstein fortune, which is blood-money in a very real sense of the term. Combine that with the fact that he believes that he is guilty by extension of all of the murders/tortures/pain/etc. that his father inflicted, and there's half. The other half is that he's cursed with the blood of a god of death and fertility who wants to destroy the world and rebuild it from the ground up. As his life fuels said deity, Adelheid feels guilty that he's included in whatever grand (and evil) schemes that said deity might be concocting.

Scholar Ling: She feels guilt about nothing. Everything she's done has been for the sake of her philosophy, and as her philosophy believes in strength as the ultimate virtue, she's done some incredibly evil things. Again, though, she feels no guilt over it; it's just the reward of being the strongest.

As for what she's done? Topping the list is impaling a deity of water, and cutting open its heart so that its life-water (not blood, for obvious reasons) could flow for years and increase the power of her empire. She single-handedly upset the natural balance of her world, and by imprisoning said deity has completely destroyed the cycle of life and death in her own world. She's doomed villages to a slow and lingering fate of starvation, used her wits and smooth tongue to break apart lovers and have them kill each other, slaughtered more than a few people by her own hand... Soul-bound her former companions so that they would obey her eternally... Took over an empire and ushered in a new age of fear and iron-fisted dominance... The list goes on and on, but I think that just about does it.

I'm sure that she's kicked a few puppies too. Ah hah hah... sorry.
